1. Salmon fillets (4 oz each)
2. Fresh lemon juice (2 tablespoons)
3. Garlic cloves, minced (2)
4. Olive oil (2 tablespoons)
5. Salt and pepper to taste
6. Quinoa (1 cup)
7. Cherry tomatoes, halved (1/2 cup)
8. Cucumber, diced (1/2 cup)
9. Red onion, finely chopped (1/4 cup)
10. Fresh parsley, chopped (1/4 cup)
11. Lemon zest (1 teaspoon) 


1. Marinate Salmon: In a bowl, mix lemon juice, garlic, 1 tablespoon olive oil, salt, and pepper. Add salmon fillets and marinate for 20 minutes.
